Mushroom Stir Fry with Oyster & Greens
Ingredients
- 375g or 6 to 8 Portobello mushrooms, thinly sliced
- 2tbs olive oil to cook
- 2 cloves garlic, crushed
- I brown onion, sliced
- 1 knob ginger- minced
- 4 bok choy, trimmed
- 1/4 oyster sauce – or add extra to taste
- 2tbs sesame seeds
To serve, Crispy shallots, sliced Spring onions and Rice noodles to serve.

Method
Heat oil in pan and Sauté garlic, ginger and onion until soft, then turn up the heat and add mushrooms in batches, do not crowd. Cook until brown, Add Bok choy, with oyster sauce – Stir to combine.
Serve with scattered with crispy shallots, sesame seeds spring onions, rice noodles and chili sauce.
